I used to hang with normal Japanese people a lot...like I hung out in tons of very average places, rural danchis, volunteered in rojin homes, etc. Have seen them doing shockingly un-Japanese things with food. Every "Japanese food" rule that I was taught by Japanese people was broken, again and again. After a while I realized, America, Japan, the cultural strengths of these nations can be defined as personality types.…

Never heard of modern teriyaki. How does it differ from the teriyaki that is everywhere in Japan?

The very short version, as I understand it, is that the sauce is different. From interviews I’ve seen of the guy in Seattle who invented it, who came from Japan, he materially changed the sauce primarily to make it much cheaper and easier to produce so that it could be used as an inexpensive, mass market food.

Ironically, my understanding is that the Seattle version flowed back to Japan and became common there. His modifications to the traditional recipe went viral. I’m not a teriyaki aficionado, but this seems to be widely accepted as the history of modern teriyaki. It does make me wonder if I’ve ever had legacy teriyaki.

Never heard of modern teriyaki. How does it differ from the teriyaki that is everywhere in Japan?

My understanding is that while teriyaki was created in Seattle as a pseudo-Japanese dish, it eventually migrated to Japan and became popular there.

"California" as a modifier to food generally means "with avocado" If you get a "California burger" it will have avocado on it

not at all. California burrito just means with french fries, and that's one of the most common uses.

That's a San Diego Burrito. A San Franicsco (Mission) burrito, for example, does not have french fries but has Avocado/guacamole.

Slight correction – French fries are in fact from France. It's just that the name "French fries" is mostly only used in America.

I thought they were fried in Greece

Yeah, but they're mostly associated with Hamburgers these days.
