Even on TV? Without their other traffic is going through network? Also for non technical people?
If you want to make it super easy for non technical people also use reverse proxies to your tailnet so jellyfin/plex is reachable at like “https://watch.example.com”. Pretty much the only friction for non technical people would be creating a tailscale account and being invited to tailnet I guess. But you could also just do that for them I suppose with auth keys

Not OP, but I've run into similar instances of Jellyfin "going nuts." Mixed media type libraries are depreciated and "broken" according to the documentation[1], which is fair enough, but sometimes this results in weirdness if a TV-show is also part of a franchise and has associated TV-movies (e.g. the Battlestar Galactica reboot, Futurama, or Breaking Bad). mpv can still do terminal ANSI-art output if you really want but it can also display pixels directly via DRM without a display server if you launch it from a random VT.
