#4Another cool trick: Acorn image editor can take screenshots of the whole desktop environment (all windows, menus, etc) and put them in separate layers. You can then rearrange them as you wish.

#5This isn't totally screenshot related, but TextSniper is nice for quickly getting OCRed text from a selection on your screen, directly into your clipboard.

#7You can just hit the option key to take a screenshot of an app without the shadow. No need to go and change system wide defaults

If you're on macOS 12 or iOS 15, you can also use the built in live text functionality in Safari, Preview or Photos
