With respect to those in this thread, I'm seeing a lot of suggestions of fairly niche books that I have never heard of or would consider reading. It may be that there is no one book that I think everyone should read. Everyone has different tastes and interests, and what I think is a must read is probably on someone else's list of books never to read.
That's the point

Why? The point of lists like this (and of learning) is to go beyond what you're comfortable with and expand your horizons and knowledge.
