Disclaimer, I don't have an M1 Mac, but I do have a buggy ubuntu desktop and used Macs my whole technical life. It seems that you're heavily in the minority with this. Even the weird bugs you mention are very unexpected. I've used a Mac for 15 years and never heard of an issue related to thumb drives. You may just have a lemon. See if you can just replace it (warranty, etc, not just spending more money).

This use case begs for arch. Not bloated and up to date upstream and AUR is very robust for the “one off” apps. Rhel on desktop makes sense for development for rhel on servers. They've been making their own chips for over a decade now. The M1 is not fundamentally different from the A series, and in fact seems to serve as a drop in replacement (in the iPad Pro line).
That being said, this is the first time they're confident enough in their own processor to rewrite their whole desktop software stack and market what are traditionally mobile-exclusive cpus as being superior to x86 in the personal computing space. And in all honesty, for good reason.

M1 uses TSMC high-density rather than high-performance. They get 40-60% better transistor density and less leakage (power consumption) at the expense of lower clockspeeds. Your 1950x also doesn't have a GPU. For comparison the rx6700xt, and Vega 56 have ~400GB/s. The 6 year old R9 nano has 500GB/s.

AMD is already planning not only 20% YoY performance improvements for x86 but now has 30x efficiency plan for 2025. I think x86 is in it for much longer than a decade. Intel otoh, depends on if they can gut all the MBAs infesting them.
Have to see if they can not only catch up, but keep up.
