Call me paranoid but I think governments of the 21st century ultimately want the ability to track every single transaction they can.
If you're worried about that then Bitcoin isn't for you. It's not just Governments, anyone can see _every_ transaction as it's in the public ledger.

In Spain soon it will be impossible to pay more than 1k in cash. Current limit is around 3k iirc. I guess it's the same in most EU countries.

And that alone is going to make tax evasion or laundering a lot harder, and probably makes it a way less attractive asset for criminals.

This is not right - pretty much all modern wallet software generates brand new key pairs each time there is a transaction, thereby creating a new address. The unspent utxo's (unspent transaction outputs) are then sent to the new address and the old address can (but shouldn't) be used.
The UTXO "privacy" model of Bitcoin has never worked out, and more modern cryptocurrencies aren‘t even attempting anything like it anymore.
