We used Twilio, Airtable and Zapier to feed 250k people during Covid

This is a very good initiative. Just a suggestion, there are some no-code tools like Appsheet that integrate with Twilio, Zapier and Google sheet. This should give users a better user interface when compared to sms. I think there is a free subscription of Appsheet available for covid related causes.
