Apple's existing standard (HomeKit) is relatively 'open' - the specification is published, and several open source implementations exist. I've used the Python one to implement automation on the smart-home devices I've built myself. However, you do need to be certified to distribute a product otherwise you get a warning in the app when you add the device. This seems like a fair compromise to me.

I haven't followed the AmpliFi line closely to know if it has easy VLAN support but yeah... What Zigbee devices can you buy apart from Hue lamps? ZWave has been dominant for many years because there are hardly any Zigbee devices, be it in the US or in the EU. FWIW I'm in the Netherlands and have all ZWave, and when you look at e.g. the symcon.de forums, there are plenty of ZWave users in the EU (and Germany specifically).
IKEA Tradfri devices are probably the biggest user of ZigBee.
I'm not sure I see much z-wave stuff (at least here in Australia)

I bet you sleep fine knowing anyone can simply pick your locks to get in using knowledge easily obtained on YouTube and using tools readily available.

That neglects to mention that Microsoft Windows 95 OSR2 launched a few months before (97) and that entire release was centered around better USB support for a broader range of components. (e.g. CDRW Drives) I don't think its fair to say PC "Followed suit" in using USB.
