Some cats will protest violently and make it extremely difficult to trim them though

And in Judaism you must circumcise in order to signify your acceptance of an ancient religious covenant. Without this acceptance the religion is castrated, eviscerated, made null. Which is of course the sole goal of its critics. There's also solid scientific evidence it contributes some health benefits, but we can and should ignore that.
Why not wait until they're adults and they can consent to the procedure?
One does not choose to be a Jew, one's ancestors made that choice for oneself.
There are many secular Jews and they are Jews none the less, accepted by the tribe even if they do not accept the beliefs. It's not the same kind of covenant as being born again or other personal belief systems that a person chooses for themselves.
Individualism is also a belief system, a cult, and is valid in and of itself. But it's not the only system, nor is it the most correct, nor even correct at all according to many.

Sure, just clip their claws using nail clippers. You can see how far down the claw the nail bed goes, so just avoid that and take the point off. Having said that, unless you get them accustomed to the process as a kitten, you may end up suffering more than if you hadn’t attempted it in the first place.

That’s really unrelated. I get that it seems analogous to you, but it’s weird to me that a cats claw is similar to a foreskin in your mind. Declawing is much more like cutting off the cats fingers
