I bought a 2016 13" MBP to use it on an external display. It only works well on 2.5K. Always consider the GPU nowadays.
That's strange. I use an early 2015 13" model which happily drives two external 4k displays simultaneously. I'm not running them high-DPI though – the performance there is noticeably worse.

What do you use as a remote? Also does RP+Kodi do Netflix/Amazon/HBO etc. streaming in a nice way?

People are missing the point about the integrated graphics. For me this is a feature not a bug because it has USB-C instead. That means that instead of hopelessly compromising thermals and power supply with some power hungry, yet limited GPU (because of the small form factor) you simply buy the CPU and memory that you need. Apple’s new strategy seems to be, instead of having products that sell themselves for their clear benefits, just flood either YouTube casuals or Twitter “celebrities” (depending on target segment) with the highest end config machine and expect praise.

A huge chunk of that is the SSD. It's actually very reasonably priced, especially considering that you get a Mac ecosystem along with the computer.

For the cheap ones. The faster/better quality ones from Samsung and Intel, which are more comparable to what Apple is using, are $400-500
The pricing is not really justifiable especially given the most use cases of the Mac mini (Home Theater, NAS, Backup etc.) are better handled by other OSes. The NUC8 with comparable specs (sans 6 core CPU) comes at under half the price! If you needed the 6 cores sure but given most workloads other than encoding don't - it's questionable. Even then the 6C processor doesn't cost enough to make up for the difference.
