Therefore, if everyone is burning out, no one is really burning out or, we somehow extended the definition of burnout to something that can be applied to even the most minute set of complaints.

You are misusing the phrase and don't have a clue about being burned out.
Energy levels are like a rubber band. You can stretch it. But when you are burned out you are at the end of the stretch and even destroying the band so it won't jump back immediately.
"If everything is urgent, nothing is urgent" is about bad management. The inability to prioritize.

This is bollocks. If all the houses burn down, they have all burned down. There are real hard facts in life and not everything is measured relative to something else.

Don't think so. People in my country are in average old (Germany), we have long standing history in IT, than any other western nation (see CCC for example), but despite both of these, I can count on one hand how many seniors I have seen at work in different companies. Finding a 50+ year old programmer, is like catching an unicorn.
Our industry is full of over time and late hours. Full of pressure because of time constraints. And all that focused on only on small part of our body.
No wonder that so many get hurt.

I think this is a simple matter of a wrong analogy on OP's side. They don't understand that "urgent" in this context means "that needs higher priority than everything else". So the saying makes sense: when everything is urgent and has equal "urgent" priority nothing stands above anymore.
Being burnt out doesn't need a frame of reference other than the internal one of the "burnee". So it can be valid under any conditions.
