More specifically, this appears to be aimed exclusively at gathering stats from penetrative sex between a biological man and woman (judging from the app's mock-ups). Like a running or cycling app that measures distance and speed — will this thing quantify thrusts-per-minute?

I doubt an app and a silicone gadget with a limited focus like that will improve someone's sex life. This looks like just another 'smart' sex toy.

I'd love to see their privacy policy for the data collected¹.

Simply talking about sex with your sexual partner(s), listening to each other's desires, and exploring sex beyond the act of penetrative intercourse seems a more sensible approach to me.
