I own one of these. It comes close, but it's just not the same.

I use my laptop, closed, hooked up to an external monitor. Nowadays, I spend a lot of time on video conferences. The number of times that my laptop has shut down mid-conference because I tapped the cable under my desk just enough for the connection to drop for a split second (combined with Apple's -- let's call it "interesting" -- decisions around power management) in the last week is way too high.

On Windows there's ConEmu, Bash on Windows and Powershell.

On Linux, there's a bazillion shells like zsh & fish and emulators like Terminator & terminix

Also, Finder is probably the least featured file manager out there and you could replace its features with pretty much anything else.

A language with no promises of stability counts as a "toy" in my mind (I understand that this can be subjective, just providing my opinion).

Say what you want about Objective-C, but at least Apple stuck with basic syntax decisions.

My Music etc., are made by Apple. My Music is Garage Band, I believe. My Videos would be iMovie, I believe. The current version of GarageBand saves projects under ~/Music/GarageBand by default. and iMovie uses an opaque "iMovie Library" in ~/Movies. I'm not sure about older versions, although from a quick Google it seems unlikely to me that it used those directories.

Apple's documentation[1] implies that applications are not supposed to use the documents directory themselves (only when the user selects it in the file picker).

What about patents?

I haven't heard any statements suggesting that APFS is patented or that Apple wants to charge for licensing it, but it's possible. We'll see what happens when 10.13 is released...

There are good cross platform options for most of what you mention. I just finished switching from Mac to Fedora 25 and aside from having to covert from 1Password to LastPass or from Paw to Postman...it's been pretty painless. I expected I'd be reaching for the Mac regularly and it's just been sitting in my backpack.

I'd also recommend taking a look at httpie, if you don't mind cli.
