LA is actually good for this, because despite a few rich neighborhoods, it’s primarily an immigrant and working class city. The old guard of restaurants in LA haven't really been touched by the new wave of gentrification. Tito's, Phillipe's, The Pantry, etc.. All packed every night, and haven't changed a thing in decades. (I guess Tito's finally accepts credit cards, so some change is ok...)
