Why do you need to desalinate it to use it for energy storage? Seems like an unnecessary step that would not increase the gravitational potential energy at all.

But what does all that have to do with anything? It won't resolve itself. Natural products have ebbs and flows. Meat isn't exactly a luxury product.
The way we produce meat is anything but natural these days. That takes its toll on our resources. Far more than growing food directly for humans does.

It's done routinely in ships and such. It's certainly much easier than the energy and machinery it would take for desalination.
