What makes you think if you turn it off it actually turns off? Though they don't need to do that, the entire conversation is already indexed. It's how they provide search in the first place, but it's not just for you.
The whole thing about scale and billion dollars data centers are not just to provide personal assistance for everyone, they can already do that just fine. But they need it only if they want to fit that entire said index in a single chat context.
