I think the missing part of the discussion is that the M1 can run fast and hot... It hasn't transcended physics - it's just not being pushed hard enough. Give it a 800% overclock and dunk it in liquid nitrogen and then we'll talk.
Makes me wonder what's going to happen when we have ARM-based desktop computers and gaming rigs.

If we can end up with superfast, supercool ARM-based Linux laptops, that'd be a huge deal :) Apple showed Debian running in a VM on an M1 prototype Mac nearly 6 months ago. I get that it won't be acceptable for some Linux diehards but the superfast, supercool ARM laptop running Linux will soon be an M1 MacBook Pro.
...except I cannot afford a macbook. The one I'm using now was paid for by my employer.
More generally, I'd love to see fast ARM platforms not built by Apple.

To be a "Mac user" you have to give up the software you prefer, and use the software Mac prefers you to use. And you don't get to be unhappy if the software you prefer doesn't run OK? I am so happy to not be a Mac user, even if I'm sad I won't be trying out the great M1 CPU any time soon.
In contrast, if you take the vast majority of MacOS first apps, there is no way you are ever running the vast majority of that stuff on other platforms. A wide variety of games even run on MacOS either natively or through compatibility layers like Porting Kit. In this respect out of Windows, Linux/Unix and MacOS, I think it's clear that MacOS wins hands down. It's not even close.
So given that this is pretty obvious, and I have a hard time believing you aren't perfectly well aware of this, why on earth are you trying to make this argument. Is running other platform's software really a primary criterion for you? In which case, the Mac should be right up your street.

Flagship iPhone absolutely crushes any flagship Android phone in benchmarks its not even close. Has been like this for many years. It is also very common that people that like Android are not aware of this for some reason.
It also basically doesn't matter for 99% of people. Most people just need their phone to be fast enough to run common applications responsively. Benchmarks are irrelevant to the average user, and are mostly a dick measuring contest. People tend to prefer mobile platforms on the basis of features that they offer, practical hardware traits like battery and connectivity, and familiarity.

For example, with an improvement to the 14nm process and not a die shrink, Kaby Lake->Whiskey Lake saw low power processors double in core counts (2C/4T->4C/8T) in essentially the same power/thermal envelope. Basically every thin laptop/ultrabook family doubled its core count.

I'm on a 3 month wait list right now to get an 8 core/16 thread AMD Thinkpad. Nobody else currently produces a sub-15W part with that much computational power.
The major difference vs the M1 is that AMD's micro-PCB design scales in core count rather than producing a single dense power-efficient die.

Frankly I don't care that much about entry level macbook's absolute performance. But the utility of 20 hours 4k video play(3rd party tests even exceeded this number) can't be understated.

We don't know what the efficiency will look like after you add all the I/O you need for a real desktop, we don't know how the memory subsystem will deal with 4 more cores that are just as fast. What's the point of having fast cores if you cannot feed them?
We don't know how lower yields for bigger chips on the newest nodes will affect their costs.
People act like Apple changed the game or is light years ahead of everyone but they literally haven't made a proper desktop-class chip yet. It's not because they don't care about higher core chips or chips with proper IO. They haven't made them because they CAN'T (yet).
So yes, Apple does have catching up to do.
