Isn't this how it's supposed to work? Why would I tip before my order is delivered?

Great. The whole idea of tipping is so ridiculous. Like, “I paid you for your service but here’s 20% more just because for unwritten rules I’m supposed to pay this.”
The idea of tipping was to incentivize better service and to justify businesses paying service workers poorly. So getting rid of tipping actually ends up just hurting service workers. Might as well raise prices, pay workers more, and get rid of tipping.
This is exactly what I think should happen. It's better for everyone:
• The worker knows exactly how much he or she will be paid.
• The consumer can determine the real cost of a service by just reading the price.

Because it’s not a reward for good service, it’s a reverse bid for service. The estimated earnings are shown to drivers so if there is no tip, that will be lower and less likely to take the job. It’s just weird to call it a tip.

When is this “tip after service” thing going to be rolled out to every country? I’m really tired of tipping in advance, having the tip automatically set to 30%, being threatened with cold food if I remove the advanced tip, etc.

Probably never because drivers use it as a way to discriminate. Not enough tip? Your food will be cold or may never show up. A better question is when will tipping in general END?
already ended for me: i chose an apartment in the middle of a bunch of different great places within walking / pickup distance
i'll still leave a couple bucks at the counter when i go in if it was a big order tho
