how do we know it's ai's breakthrough and not ai simply stitching together insights it accumulated from chat with people who are asking questions about the small part of it?

That would still be an AI breakthrough in the sense that it was done before a human. In the end, "everything" in life is about piecing together what people have already done, but the one that does it first can claim to be the inventor.

Mathematician here. Now I know what Magnus feel.

Actually, I was never as good in math like Magnus is in chess. So I always knew people that was better than me and they knew people that were even better. I think we still have a few years of Centaur Math, where a human can steer the AI to get the best results.

There were people that were too smug about math or writing ability, and deserve the schadenfreude. Anyway, I think the important thing is to understand there is always someone better than you, but you can improve and you also have other abilities. Do you thing Messi is good at woodworking or editing videos?
