As the new vaccines are about to reach the general population, I would like to start educating myself on them. I'd feel more confident getting the shot after having a better understanding and I could maybe help convince reluctant people too.

Which materials would you recommend to an engineer with basic scientific understanding of biology so he can educate himself further, without starting a PhD to understand the materials?
