You might as well apply for an internship at OpenAI, DeepMind, FAIR (Meta Platforms) or Nvidia with those skill sets as this is exactly what they are looking for. I don't know any other company that is more relevant and really respects your skillsets other than those companies. If I were you, I'd give it a shot and see where it goes and I seriously believe that they will give you an offer.

Alright, I took your advice and applied to a bunch of internships at those four :) I'll also cold email some people and see how it goes.

Started in IBM mainframe world (OS/MVS, COBOL, Assembly, JCL), shifted to UNIX/C/RDBMS world (numerous UNIX variants, C, shells, SQL, Informix-4GL, Informix Servers), then had my own ticketing business for years. Recently folded the business and seeking to re-enter industry rather than early retirement. I am mobile developer, and for the past four (4) years I have been working remotely on Ouisync App (https://github.com/equalitie/ouisync-app), as the front-end developer, using Flutter.

My previous experience was creating cross-platform apps for Android and iOS, using Xamarin Forms (now MAUI), and native Android apps using Java, and Kotlin.

I am currently based on Hong Kong, but I usually move to South America or Canada, for some time of the year, to be close to my family. Because of this, I prefer a remote position; but I am open to on-site if it is a good fit.

I know Asia is not the more friendly place for remote work, the timezone can be a bit extreme when interacting with other areas of the globe, so I have adjusted to work with teams in Europe and the Americas, therefore it is not a problem for me to base my work time on other timezone.

I am also a Sociologist, and I enjoy interdisciplinary projects, in which I can bridge humanities and technology, and think software on relation to human interactions.
