I'd recommend changing your tagline from "Meet the men and women..." to "Meet the people..." so that you don't exclude folks who are non-binary or gender-nonconforming.

This is so stupid. So WTF does a person who is neither a man nor woman refer to themselves as? You either have a penis or you don't. Stop twisting the definitions. If you're going to be so asinine about changing it to "people," then hopefully you better not ignore the fact that you're now referring to children and babies, which defeats the entire tone of the website.
First, it includes a group of people that do not identify as male or female (physically, or in identity).
Then it removes ordinal priority. Take email. In your To: field, who goes first? The person with the email address starting with 'a'? The most senior? A bunch of over-thinking can go into that, which 'people' removes that. Or in email, "Dear All,"
And then, 'people' could be a team. HN startups seem to be all about, though not exclusively, teams that are co-founders; what one achieves would not be possible without the other. So 'people' makes logical sense where pairs or teams are included.
And if there was a baby that had changed the world through software, I'd sure like to meet that baby. Children do hack and create things. And kids have influence on others. The smallest thing can inspire another, so yeah, that voice should be included too. Include kids! Or experiences when kids!

There are people that don't feel addressed adequately as neither man nor woman? I thought we had some man that want to be called woman and some woman that want to be called man but a third option I never heard. Which is? Should they be addressed the way they want or should people dismiss this immature behavior?

This is not up to you. It is not your project. "woman and man" are inclusive enough, because they cover 100% born people. You can have an even more sensitive (not inclusive because 100% is the limit) approach but it is a matter of taste, nobody is entitled to be lecturing people about how should they approach their customers.
