Check out DRYML from the Hobo project (hobocentral.net). You build taglibs that can be used and overridden however you like.

Don't forget the -r switch for tailing Rails logs with colored output.

http://www.iplotz.com is a sweet hosted solution with some basic collaboration tools as well. Works very well for us.
