What about using Overleaf.com? I find it takes away the setup part and allows you to start typing in LaTeX right away. The downside is that it is an online tool.

Another great alternative is Quarto ( https://quarto.org/ ). The author mentions that BookDown requires you to install R, Quarto does not.

It would be nice if they could use that same modern aesthetic in Teams.

Exactly like Notion, but it seems a little more basic right now.
